Protein rest is optional.
Mash grains in 5 gallons 166 degree water to hit 147 degrees, for 60 minutes. Add 2 gallons 206 degree water to raise mash temp to 157 degrees for another 20 mins.
Batch sparge until wort clears. Sparge with 170 degree water until you reach 7 gallons. Bring wort to a boil and complete the hop schedule. At flame out, add 2lbs of your preferred honey (I use wild flower).
Pitch with Wyeast 1318 London III and ferment to completion. Bottle/keg and enjoy!
