A big, rich dopplebock that won it's class in a popular home brew contest. A large grain bill with some extract added to boost the OG.

Mash Efficiency: 60%

Grain Bill:
Two Row Malt: 8lbs 0oz
Munich Malt: 2lbs 0oz
Dry Malt Extract: 1lbs 0oz
Liquid Malt Extract: 3lbs 0oz
Aromatic Malt: 1lbs 0oz
Cara-Munich Malt: 0lbs 8oz
Chocolate Malt: 0lbs 5oz
Dextrin Malt: 1lbs 0oz

Hop Schedule:
Hop: Hersbrucker 1oz   3.3% alpha acid   60 minutes
Hop: Northern Brewer 1oz   6.6% alpha acid   60 minutes
Hop: Halertau .5oz   % alpha acid   15 minutes


Single infusion mash.

Mashed in 5 gallons 168 degree water, hit 157 degrees for 60 minutes.

Batch sparge until wort is clear. Sparge with 2.5 gallons 170 water. Add:

  • 3lbs Briess Liquid Gold extract
  • 1lb Briess Light DME

Bring to a boil and complete hop schedule. Cool to at least 60 degrees and pitch  Wyeast 2206 Bavarian Lager. Ferment at 50 degrees (I brewed this in Febuary and the temperature was perfect in my garage).

After about week, or the bubbling slows, rack to a glass carboy for secondary fermentation. After fermentation is complete (4-6 weeks) let the beer warm a bit (room temperature for me) for a day or two to give it a diacetyl rest. Bottle/keg and store at 35 degrees for a couple weeks to a month to lager it.

It's a long wait to try this brew, but it is well worth it!
