A maltier Amber ale with an earthy hop profile I originally brewed on Friday the 13th in Febuary '09.

Hop: Kent Goldings | 2oz | 5.4% alpha acid | 60 minutes |
Hop: Kent Goldings | .5oz | 5.4% alpha acid | 10 minutes |
Hop: Fuggles | .5oz | 5.4% alpha acid | 10 minutes |
Hop: Kent Goldings | .5oz | 6.0% alpha acid | 1 minutes |

Comments:
Single infusion mash. Mash at 155 degrees for 60 minutes. Batch sparge until clear. Sparge with 170 degree water until you collect 6.5-7 gallons (adjust to your 1 hour boil off volume).
Complete the hop schedule, adding the last addition of Kent Goldings and Fuggles for 1 minute. Cover and use wort chiller until temperature drops to 70 degrees. Filter and pitch on Wyeast 1318 London III.
Ferment until bubbling slows (2-3 days with the aggressive 1318 yeast) and reack to carboy. Keg/bottle when fermentation is complete and enjoy!
