A tribute to the late AC/DC singer Bon Scott and his homeland Scotland. This is a rich scottish ale with a simple single infusion mash and short grain bill.

Comments:
Combine grain bill and mash at 155 degrees for 60 mins. Batch sparge until wort clears and sparge with 170 degree water until you collect 6.5 gallons of wort.
Add a tsp of gypsum to wort and bring to a boil. After you get a rolling boil, complete hop schedule (total boil time is 60 minutes).
Cool to 70 degrees and pitch with Wyeast 1728 Scottish Ale Yeast.
Ferment under 70 degrees. Rack to glass carboy when bubbling slows to around once per minute.
Bottle/keg when fermentation is complete and enjoy!
